Cook Time: 1 hour 5 min. • Serves 8 Ingredients: 5 sweet potatoes ½ cup white sugar ¼ tsp salt 2 Tbsp heavy cream ¼ cup butter ¼ cup butter, softened 2 eggs 3 Tbsp all-purpose flour 1 tsp vanilla extract ¾ cup packed light brown sugar ½ tsp ground cinnamon ½ cup chopped pecans Directions: 1. Preheat oven to 350 degrees. Lightly grease 9x13 inch baking dish. 2. Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash. 3. In a large bowl, mix the mashed sweet potatoes, salt, ¼ cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish. 4. In a medium bowl, combine ¼ cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture. 5. Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned. white ChiP PuMPkin SPiCe CAke Ingredients: 1 (18.25 ounce) package spice cake mix 1/3 cup vegetable oil 3 large eggs 1 cup white chocolate chips 1 cup 100% pure pumpkin 2/3 cup evaporated milk Directions: 1. Preheat oven to 350 degrees. Grease and flour bundt pan. 2. Combine mix, eggs, pumpkin, evaporated mile and vegetable oil in large bowl. Beat at low speed until moistened. Beat at medium speed for 2 minutes. 3. Stir in chocolate chips 4. Pour into bundt pan and bake 40-45 minutes. Cool on wire rack 25 minutes. 5. Drizzle half of glaze over cake and serve with remaining glaze. Glaze: Heat 3 Tbsp evaporated milk in small saucepan over medium heat to a boil. Remove from heat and add 1 cup white chocolate chips. Stir until smooth. Stir in ½ tsp cinnamon. CRAnBeRRy SAuCe Ingredients: 12 ounces cranberries; 1 cup white sugar; 1 cup orange juice Directions: In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.
