14 OUR YUCAIPA | MARCH 2015 Chicken Fajita Quesadilla It's Cinco de Mayo somewhere... By Stacey Parr Jim Gaffigan, a popular comedian, said that all Mexican dishes have the same five ingredients, the end product is just folded differently depending on the order. He said, "Mexican food is great, but it is all the same, it's almost a conspiracy. It's almost like they had a meeting 200 years ago in Mexico City and one guy stood up and he was like, "Hey, the reason I got everyone here is pretty simple, I figured we could rename this one entree seven times and sell it to the North Americans. The French said it would be a good idea… Who's in on it? "Then some guy in the back was like, 'Wouldn't that be dishonest?' "Well, if you're quiet we'll name one of the entrees after you, what's your name?" "'My name's Chimichanga.'" Mmmmm.… chimichangas. 3 boneless chicken breasts, or a rotisserie chicken 2 tbsp. olive oil 2 tbsp. fajita mix 1 red bell pepper 1 green bell pepper 2 onions 1 cup shredded cheese Salsa Sour cream 8 tortillas 2 tbsp. butter Clean and chop up the onion and peppers into long strips. Clean and slice the chicken breasts into long strips and place in a bowl. Add a tbsp. of the fajita mix to the chicken breast and mix well. In a large skillet, heat 1 tbsp. of the olive oil and add the chicken to it. Cook the chicken for 5 to 10 minutes until it's fully cooked and no longer pink. Remove chicken from skillet and wipe the skillet clean. Add another tbsp. of olive oil to the skillet and heat it up. Add the onion and cook for a couple minutes until it's slightly translucent. Add the peppers and the fajita mix and mix well. Cook for a couple more minutes so the peppers cook slightly. Add the chicken to the skillet, mix with peppers and onions and cook for a minute. In a clean skillet, add a bit of the butter and melt. Add a tortilla and move it around until it's buttery. Add a little bit of the chicken and onion mixture to half of the tortilla and about ¼ cup of cheese depending on how much you like. Fold the tortilla over and leave until golden. Flip it over and cook other side until golden. Repeat steps for remaining tortillas. Serve with sour cream and salsa.
