OUR YUCAIPA | JUNE 2015 17 THE DAGWOOD • 10 slices crusty white bread • Assorted fresh greens (green leaf, shredded Romain, • red leaf and Boston lettuces) • 1/4 lb each of pepper jack, white American, provolone, and cheddar thinly sliced • 1/4 lb each of turkey, pastrami, salami, Capocollo ham, pepperoni and roast beef thinly sliced • 1 large-sized tomato thinly sliced • 1/2 yellow pepper thinly sliced • 4 pieces of bacon cooked crisp • bamboo skewer 1. Lay out five slices of bread. Layer two green leaf lettuce. Layer each of the remaining three with the other lettuce. 2. Layer the first green leaf sandwich with three slices pepper jack, next add turkey and top with four tomato slices. Cover with another slice of bread and place on skewer. 3. Layer second green leaf sandwich half with three white American slices, add pastrami slices and top with slice of bread. Place on skewer. 4. Layer shredded romaine sandwich half with three slices of provolone; on top of cheese, shingle two slices of salami, next fold one ham slice and place on salami. Then shingle two slices of pepperoni, fold and add one ham slice; top with yellow peppers and bread slice. Place on skewer. 5. Layer red leaf sandwich half with three slices cheddar, two slices tomato, fold and add roast beef; top with bread slice. Place on skewer. 6. Layer Boston lettuce sandwich with three slices tomato, add four pieces of bacon and top with bread. Place on skewer. • Assorted chicken wingettes (drumsticks and wings) • vegetable oil • pepper • wing sauce Preheat oven to 400. Rinse wings and pat dry. Put vegetable oil in a shallow bowl. Quickly dip each wing in oil and put on foil lined baking sheet. Sprinkle with pepper. Bake for 20 minutes. Flip wings and bake another 25 minutes. When they are done coat wings in your favorite sauce. We like hot sauce and honey BBQ. Serve with ranch or blue cheese. Whiskey Sauce: • 1 Tbsp butter • ¼ cup chopped onion • ½ cup whiskey • 1 cup of beef stock • ½ bay leaf • 1 tbs roux • 1 tsp tomato paste • salt and pepper Burger: • Burger patties • Burger buns • Mushrooms • Onions • Crispy bacon • Cheese • Whiskey Sauce Sauce: In a small sauce pot, melt butter and saute the onion until transparent, on medium heat. Add whiskey and simmer for about 2-3 minutes. Add beef stock, bay leaf and tomato paste. Using a silicone covered whisk, stir until all combined. (To make the roux, combine ½ tbs soft (not melted) butter and ½ tbs of flour. kitty1Stir together very well.) Whisk in the roux, salt and pepper. Simmer for about 5 minutes, whisking often. Take out the bay leaf before serving. Burger: Salt and pepper patties and cook the burgers to your preference. Saute mushrooms and onions until caramelized and add a little bit of whiskey sauce. Top the burger off with sauteed mushrooms and onions, bacon and whiskey sauce.
