Egg wash* DIRECTIONS Chef's Corner By Randy Balt INGREDIENTS Mini Chicken Pot Pie Computers, electronic communications and the Internet have made the sharing of recipes quite easy. This one is a perfect example. While reviewing Facebook posts the other day I came across a picture of a mini chicken pot pie that was linked to a simple instructional video showing how it was made. Darn, if it didn't pique my interest enough to give it a try. The result was a tasty meal worth all the effort it required, which really wasn't that much. That video is available for review at this link: https://www.pinterest.com/ pin/554857616571476997/. 1. In a medium sized pot, melt butter over medium heat. Add carrots, onions, celery, salt and pepper. Cook until onions are translucent. 2. Add potatoes, garlic powder, thyme, dried parsley and chicken stock. Bring to a boil, add the cooked and cubed chicken breast and bring back to a boil. 3. In a small mixing bowl, add the flour and a few ladles of the chicken stock. Whisk until the flour is incorporated then add to the pot. Stir until the chicken pot pie filling has thickened. Add the frozen peas, set aside. 4. Take the puff pastry, cut out four circles. Take two of those circle (these will be your top layers) and cut out a smaller circle inside, keep everything intact. Egg wash the bottom two circles, place a top circle on each bottom circle, egg wash the entire thing. 5. Bake at 400°F/205°C for 20-25 minutes or until puffy and golden brown. 6. Take the puff pastry shell, use a knife to remove the top, fill with the chicken pot pie filling, put the top back on. Enjoy! 7. *Egg wash is the baker's secret and it's super-easy to make and use. Whisk an egg with a splash of cold water or milk until pale yellow and perfectly mixed. Prep: 20 min. • Cook Time: 20-25 min. Total Time: 40-45 min. • Yield: 4-6 servings Level: Medium
