14 SOLERA DIAMOND VALLEY | SEPTEMBER 2016 By Theresa Rossetti, resident This month we're reviewing a new bakery in town. The owner, Laura Fenton, opened the site in the Historic Downtown District two months ago, having previously worked in wholesale baking. Café tables and chairs are out front and inside, allowing immediate eating of any purchased treats. Bakery display cases inside hold the day's selections, and we get a view into the working ops of the bakery, as the vast majority of items and fillings are prepared onsite. Now on to the goodies! Laura and her fellow baker, Juan, offer a French Twist Bread and many superb bakery items. On our two trips there we taste-tested quite a few of the treats. The Petit fours, small squares of frosted cake made with almond paste, are the best I have ever tasted. Since I'm a bakery snob, that is saying a lot. Almond paste is also used in the filling for their Bear Claws. Other items on display were Paris-brest (a traditional French pastry with hazelnut filling), éclairs, fruit tarts, cream puffs, muffins, scones, lemon cheesebars, napoleons, turnovers, cookies, Sachertorte and an East Coast style cheesecake. Oh, I forgot the cannoli and the tiramisu! I lost track with so many wonderful things to choose from. Items are easily "shareable" but not oversized. We split a few with our neighbors, who described the items as "mouthwatering" and "delicious," so it's not just my opinion. Orders can be placed in advance if you are interested in a large cake or assortment of items to serve for an event. I certainly recommend the Sachertore, as I enjoyed a few bites of a slice over a number of evenings before finishing it all. Laura expects to soon be licensed for lunch items such as quiche, croissant and French dip sandwiches as well.
