16 SOLERA DIAMOND VALLEY | OCTOBER 2016 By Theresa Rossetti, resident Have you heard of a Wonder Pot recipe? If you have you probably can figure out why I like them. Once again, if you search online you'll find quite a few of these recipes. This is one I've tried and liked. Please note, if you're offended by any pasta cooked more than al dente, this is not for you. I Wonder, Wonder, Wonder… Pot? INGREDIENTS: • 4 cups chicken (or vegetable) broth • 2 Tbsp olive oil • 12 oz. fettuccine • 8 oz. frozen chopped spinach • 28 oz. can diced tomatoes • 1 medium onion, sliced • 4 cloves garlic, sliced • ½ Tbsp. dried basil • ½ Tbsp. dried oregano • 1/4 tsp. red pepper flakes (or to taste) • black pepper • shaved Parmesan cheese Optional: Cubed grilled chicken, cooked sausage slices, raw shrimp, tofu, cubed mozzarella, etc. Any type of protein you wish to make this a whole meal. INSTRUCTIONS: 1. Add broth to a cold, large pot. Break the fettuccine in half and add to the pot along with the canned tomatoes (with juices), olive oil, frozen spinach, onion, garlic, basil, oregano, red pepper and some black pepper. If you use reduced or no salt broth, you will need to add salt or the wonderpot will be very bland. 2. Make sure all ingredients are submerged in the liquid, place a lid on the pot and turn the heat on to high. Allow the pot to come to a full boil over high heat, then remove the lid and turn the heat down to medium. 3. Allow the pot to continue to boil over medium heat, without the lid, for 10-15 minutes, adding meat, shrimp or tofu (if using) after 7 minutes. Cook until the pasta is done and most of the liquid has been absorbed. Stir the pot gently every few minutes as it cooks to prevent the pasta from sticking to the bottom of the pot. Over stirring and over cooking will make the pasta sticky, so taste as the liquid gets absorbed and remove from heat as soon as the pasta is cooked to your liking. Add cubed cheese at this point, if using. Taste and add salt, pepper, more red pepper to your taste. 4. Sprinkle with shaved Parmesan just before serving.
