Place in a large, lidded container. 2. In a small bowl, whisk together the oil, vinegar and honey until the honey is completely dissolved. Add the spices and whisk until combined. 3. Toss the dressing with the cabbage to coat, then cover and refrigerate for at least 48 hours. The cabbage will change from purple and white to a deep magenta as the flavors combine. Note: The finished cabbage actually tastes better when it's shredded in long strips rather than grated like standard coleslaw. There's something about allowing enough surface for the dressing to absorb and do its work. This recipe is based on a very old family favorite which combines sweet, sour and spice. It's good after 48 hours, but even better after 3 or 4 days of "pickling." This is a perfect make-ahead salad for get-togethers. Instructions: 1. Combine rice, water and milk in a saucepan. Stir well, cover and cook over medium heat until water is absorbed and rice is tender – about 20 minutes. 2. While rice is cooking, toast almonds in olive oil, stirring 2-3 minutes. When lightly brown, set aside. 3. Spoon rice into serving bowl and add almonds and remaining ingredients. Serve warm. Serves four. Marinated Red Cabbage Salad Basmati Rice with Cranberries • ½ head red cabbage • ½ cup extra virgin olive oil • 5 oz red wine vinegar (1/2 c + 2 Tbsp) • 2 Tbsp honey • 2 tsp kosher salt • ½ tsp paprika • ¼ tsp turmeric • 1 tsp onion powder • 1 tsp garlic powder • ½ tsp black pepper Ingredients: Ingredients: Submitted by Lisa Tucker. Patti Christensen submitted this recipe. If you're tired of potatoes or pasta, try this rice dish flavored with roasted almonds, cilantro and parsley, and studded with cranberries. Instructions: 1. Beat butter, sugar and eggs until fluffy, blend in sour cream and vanilla. Sift dry ingredients and add to mixture. 2. Grease and flour a tube pan. Combine nuts, cinnamon and sugar. 3. Alternate batter and cinnamon mixture in tube pan. 4. Put in cold oven, then set at 350 degrees and bake for 55 minutes. Sour Cream Coffee Cake • 1½ cubes butter (part margarine) • ½ cup sugar • 2 eggs • 1 cup sour cream • 1 tsp vanilla • 2 cups flour • ¾ tsp soda • 1½ tsp baking powder • ¾ cup chopped walnuts • 1 tsp cinnamon and 2 tsp sugar Ingredients: Submitted by Marian Cobb.
