Whether you are serving one, two or a crowd, homemade pizza can be a quick and easy meal, especially if you use shortcuts for the pizza dough. Use premade dough or a substitute such as flatbread, naan, or pita. Make the sauce ahead of time, or skip the sauce and just lightly brush the crust with olive oil. Get creative with toppings; add whatever combinations suit your tastes. Toppings can include anything from cheese only to an elaborate combination of meats and/or vegetables. If you have guests, put out a variety of toppings and let everyone make their own combination. NOTES: Dough: Fresh dough may be purchased from local pizzerias and can also be found in the fresh and frozen sections of the local grocery stores. If you have the time and your pizza dough skills are good you can always make your own homemade dough. Sauce: Make a big batch of sauce ahead of time. The sauce will keep for several days in the refrigerator or divide into ¼ cup to ½ cup portions and freeze for later use. Toppings: While most toppings can be chopped up and put on the pizza before baking, a few need to be precooked for safety, texture and flavor. These include all raw meats like sausage, bacon, beef or chicken; any hard or root vegetables, squashes, potato and sweet potato; onions (cooking onions until they are soft adds a sweet note to your pizza and caramelized onions are even better); mushrooms should be sautéed to remove excess water and concentrate the flavor; hearty greens such as kale. Swiss chard and broccoli rabe need to be cooked to soften the stems and reduce the bitterness. Suggested Pizza Combinations: Margherita - Tomato, basil and fresh mozzarella; Mediterranean - eggplant, mushroom, roasted red bell pepper, caramelized onion, kalamata or black olives, and feta; Squash and Pepper - paper-thin slices of butternut squash, caramelized onions, olive oil, and red pepper flakes; Ham or turkey breast with brie - Sliced ham or turkey, sliced brie and thinly sliced green apple 18 FOUR SEASONS BREEZE | MAY 2022 PIZZA PARTY Personal Pita Pizzas - One, 6" pita per person Ingredients: • Extra virgin olive oil • Sauce (see recipe) • 1/4 to 1/3 cup shredded cheese per pizza, such as mozzarella, Italian blend, provolone, gruyere, feta, etc. • Suggested toppings: your choice of cooked meats such as; sausage, bacon, chicken, beef, ham, turkey breast; cured meats like pepperoni or salami; grilled vegetables or caramelized onion, sautéed mushrooms, eggplant, squash, roasted peppers, tomato, olives, etc. Micro greens, if desired Directions: Preheat oven to 425°. Line a baking sheet with parchment paper. Lay out the pitas on the baking sheet. Brush each pita lightly with olive oil. Spread the sauce almost to the edge of the pita. Sprinkle with cheese. Add any combination of desired toppings. Bake until the edges of the pitas are crisp and the cheese is bubbly and melted, about ten minutes. Remove from oven, let cool for about a minute. Top with micro greens. Enjoy! Cat Cora's Easy Pizza Sauce Ingredients: • 4 ounce can tomato paste • 1 ½ cups water • 1/3 cup extra virgin olive oil • 2 cloves minced garlic • Salt and pepper to taste • ½ Tablespoon chopped fresh oregano leaves • ½ Tablespoon chopped fresh basil leaves • ½ Tablespoon chopped fresh rosemary leaves Directions: Combine the tomato paste, water, and olive oil.
