• 1 1/2 cups plain panko crumbs
• 2 teaspoons unsweetened matcha powder
• 1/2 cup flour
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon paprika
• 1/4 teaspoon cayenne pepper, optional (if you want a touch of heat)
• 2 eggs, beaten
• 1 1/2 pounds boneless skinless chicken breasts or chicken tenders
• Sliced almonds, one nice slice for each "fingernail"
• 6 to 8 split top hot dog buns, optional
• Barbecue sauce or Ketchup
• Ranch dressing, optional
1. Preheat oven to 400 degrees. Lightly oil a rimmed baking sheet,
set aside.
2. Mix the panko and matcha powder together in a pie pan or
shallow bowl. In a second pie pan or shallow bowl, mix together
the flour salt, pepper, paprika and cayenne. Pour the beaten eggs
into a third pan or shallow bowl.
3. Pat the chicken dry with a paper towel. If using breasts, trim off
any excess fat, then cut into tenders slicing lengthwise into 3 to
4 strips. Each strip should weigh about 3 ounces. One tender at
a time, dredge each in flour, shaking off the excess flour. Then
dip in egg and finally in the panko mixture. Place the breaded
tender on the prepared baking sheet. Once all the tenders have
been breaded, add an almond slice "nail" by brushing one side of
an almond slice with a bit of the beaten egg, then press the egg
brushed side onto the tip of the narrow end of the tender. Repeat
until all tenders have an almond "nail" attached.
4. Bake the tenders in the preheated oven until lightly golden and
cooked through to an internal temperature of 165 degrees, about
15 minutes.
5. Place each tender in a hot dog bun, if using buns. Drizzle ketchup
or barbecue sauce (blood) over the top. Serve.
Pairing suggestions: sweet potato or regular fries, tater tots, or chips.

treats and found this fun and easy dish to make a Halloween meal that is a spooktacular treat. The
"fingers" may be served with or without buns. When serving, feel free to quote Sir Arthur Conan
Doyle who said,"Where there is no imagination there is no horror."
