January ushers in a new year and the perfect chance to get inspired in the kitchen. Whether you're in search of healthy dishes or comfort food classics, there's plenty of scope to include seasonal ingredients in your cooking. Foods that are in season in January are lemons, oranges, grapefruit, beets, turnips, celery root, cabbage, collards, broccoli, cauliflower, kale, butternut squash, acorn squash to name a few. If you are at all like me, chilly weather has you dreaming of hot chocolate rather than the produce aisle, but some healthy foods taste especially good in the cold months. Chris Romano, a global produce coordinator at Whole Foods, says January is the month for citrus fruit. Try switching up your main squeeze and choose a Meyer variety over the run-of-the-mill lemon this month. Meyer lemons are smaller and a bit rounder than regular lemons, and they don't taste as tangy. "They're sweeter than they are sour, and it's the favorite lemon to use when you're cooking any type of seafood," says Romano. "It's not something you would eat out of your hand, but it's great for cooking and adding to dishes." Have some leftover turkey? Give this Turkey Biscuit Stew a try (if you don't have turkey, a rotisserie chicken works too): 1/3 chopped onion, 1/4 cup butter cubed, 1/3 cup all-purpose flour, ½ tsp salt, 1/8 tsp pepper, 1 can (10 ½ oz condensed chicken broth, undiluted, ¾ cup milk, 2 cups cooked turkey, 1 cup cooked peas, 1 cup baby carrots, 1 tube large refrigerated butter milk biscuits. Directions: Preheat oven to 375°. In a 10-in. cast-iron or other oven-proof skillet, sauté onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually add broth and milk. Bring to a boil. Cook and stir until thickened and bubbly, about 2 minutes. Add the turkey, peas and carrots; heat through. Separate biscuits and arrange over the stew. Bake until biscuits are golden brown, 20-25 minutes, and enjoy! People always ask how do I get inspired to cook? Well, the experts say to not compare home cooked meals to restaurant food. Start with easily accessible recipes, learn how to make what you are craving, and the most fun, cook for others. What works for me is going to the Happy Cookers meetings!
