FOUR SEASONS BREEZE | AUGUST 2024 5 Message from the Board Mike, the Bistro operator, closed his business here at Four Seasons on June 23. A search for a new Bistro operator began with the formation of an Ad Hoc Bistro Committee (which was quickly established as a standing committee) to locate a replacement for the Bistro operation that would benefit the residents of Four Seasons. Seven Committee members were selected along with two Board members and two FirstService representatives. Requests for Proposals were developed and six candidates for the Bistro operation were identified. Of the six candidates, three potential Bistro operation replacements completed the application process. Interviews were conducted and the Ad Hoc Committee selected the candidate they feel will best serve the needs of our community. After the Board voted to approve the new Bistro operator, all candidates were contacted by our General Manager Eric Zarr who advised them of the results. Plans immediately began to inspect the Bistro, and as a result, a deep cleaning was approved by the Board of Directors. The new Bistro operators are Juan and Paulina Palacios and their family. Juan has been a cook with two of our former Bistro operators, Stacy and Mike, and has extensive restaurant background in addition to his service here at Four Seasons. While working for the prior Bistro operators, Juan worked on their menu items, but has told the Bistro Committee that he plans to develop his own menu items, including specials. Additionally, he discussed having salads and sandwiches in the case near the counter as "Grab and Go" items. Juan and Paulina also plan a delivery service for our community and are currently finalizing the menu and its pricing. When will the Bistro open again? Right away. Juan and Paulina have applied for and obtained the permits and licenses. They have selected staff who will train with the Kopper Kettle food servers at Stacy's restaurant in Yucaipa. It is anticipated that the new Bistro operation will begin about Aug. 7. Please check the Daily Report for opening day information. In addition to deep cleaning the Bistro's kitchen, testing of the equipment is in progress. Other improvements include touch-up paint in the general area, carpet replacement (this had been planned whether or not the Bistro operator changed), and 40 new chairs to replace the older worn chairs. The carpet replacement and chairs were Reserve items. Juan and Paulina are anxious to open the Bistro. This will be a family operation with their children working with them, and a cousin as an additional cook. While Juan has extensive experience in the restaurant business, he does not own or operate another restaurant at this time and will dedicate his time to our Bistro. Juan and Paulina look forward to serving you so stop by, say hello, and try the food. The road repair is scheduled to begin shortly. The Finance Committee reviewed the two final contractors, and, after extensive review and price comparison, recommended NPG as the company to repair our roadways. Some 20 miles of roads are affected by this project, and once started, the repairs will take approximately 90 days to complete. Once NPG begins the repairs, there will be numerous road closures necessary to get the work done. Both leaf lets from NPG and information posted in the Daily Report will be used to inform residents, in advance, about areas that will be under construction. We have been waiting to get the project started for several years and ask for your patience during the repairs scheduled. In the end, our roads will be in good condition as we enter our 20th year as Four Seasons in Beaumont. The solar project for our three facilities has not been permitted as of yet because of some issues facing the solar project. The issues are with the financial arm of Trinary, which have not been resolved at this time. The solar permits cannot be requested or issued by the city until the problems with the project are resolved. The Board meets the second Thursday of each month at 1 pm in the Ballroom. "Meet with the Board" is a more informal setting on the third Wednesday of each month at 2 pm in the Ballroom. This forum allows Board members to engage in conversation with residents on almost any subject except confidential issues under litigation or discussed in Executive Session of the Board.
