In a large saucepan cook asparagus in a small amount of boiling water about three minutes or until crisp-tender; drain. Immediately plunge asparagus into ice water to stop cooking. 2. In an extra-large skillet cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon and drain on paper towels, reserving 1 tablespoon drippings in skillet. 3. Sprinkle chicken with salt and pepper. Cook chicken in the reserved drippings over medium- high heat about 12 minutes or until brown, turning once. Remove chicken from skillet; keep warm. 4. Add squash to skillet; cook for three minutes, stirring occasionally. At the same time, in a medium bowl whisk together broth, flour, and lemon peel; add to skillet. Cook and stir until thickened and bubbly. Add asparagus and chicken to skillet. Cook about six minutes more or until chicken is no longer pink (170 degrees F). Add lemon wedges in last minute. Sprinkle with bacon. Serve. This particular recipe shows up in multiple websites, such as Better Homes and Gardens, Food.com, and Recipe.com, just to name a few. It's flavorful, easy to make, and should satisfy your family's dinner-time appetite. Besides, it includes bacon, which is its own important food group. Bottom line: Made it, liked it, and I'll make it again. Total time: 45 minutes • Yield: 4 servings Activities Director Corner By Cindy Graves, Activities Director April is going to be one of my favorite months so far, with so many celebrities visiting the Lodge from Palm Springs. We are expecting the likes of Reese Witherspoon, Denzel Washington, Morgan Freeman, Kathryn Zeta-Jones and Diane Keaton, all of whom should be surprising us on Tuesday, April 1, as Roland Harrah takes them on a personal tour of our facilities. Many of you know that both of Roland's children were child actors in Hollywood and Palm Springs, giving Roland so many of the theater and film connections that he enjoys today. If you happen to be in the Lodge when these folks arrive, please extend to them the same courtesy that you extend to all of our regular neighbors. Roland has assured them that they won't be hounded and will be treated like everyone else at the Lodge. I will have to be sure that I take a sedative that day so that I live up to my own exhortation. Thank you Roland for bringing them by! Don't miss the big Emergency Preparedness Expo on Saturday, April 5 from 10 am to 2 pm in the Lodge. There will be something in nearly every part of the Lodge that day, so don't miss all the valuable information and emergency supplies vendors. Yes, you will be able to purchase some help safety items for your home so bring your extra lunch money to spend. Colin Taylor will be leading us in a hilarious and intellectually stimulating Trivia Night in the Ballroom on Friday, April 11 at 6 pm. Bring in your dinner from Smitty's or just your favorite beverage. Come as a whole table or just yourself. You don't have to play if you don't want to, but you'll have a laughing good time watching others try their hand at random questions. Prizes will be given out for teams and for individuals. There is no cost to attend, so you'll get your money's worth! Speaking of Colin Taylor, our Performing Arts Club member extraordinaire… He is helping Susan and Sheldon Craig with the next PAC show on Friday, April 25 at 6 pm which is the PG- 55 Show. This show has a little suggestive content, so it's not appropriate for the grandkids. This is also a free show and dinners and beverages are welcome to come along with you into the Ballroom. Finally, I would like to let you know that you may sign up for the HOA Garage Sale at the Lodge front desk. It's a fun day for both the treasure hunters and the garage sellers, whether you are selling at the Lodge parking lot or whether you're having a sale at your home. The price to participate is only $7 and takes care of both your city of Beaumont Garage Sale permit and outside advertising. This is one of the few times in the year that we invite folks from the "outside" to come and join in the fun with us. The last date to sign up is Wednesday, April 23. The garage sale itself is on Saturday, April 26 from 8 am to 2 pm. It's going to be a great April! Happy April Fool's Day (Can you guess which part of this article might be an April Fool's story?).
